Maritime Tasmanian single malt whisky, made, matured and bottled on the edge of the ocean in Bicheno, Tasmania.

A Tasmanian maritime single malt whisky distillery, Waubs Harbour’s vision began with a question from Tim Polmear (Co-founder) to his brother Rob Polmear (previously Head Distiller at Overeem Whisky and Head of Production at Lark Distillery). “If you could make whisky your way, using the best equipment in the perfect location, how would you do it?”

Their Tasmanian heritage, deep personal connection with the ocean, natural resourcefulness and experience crafting premium whisky collided and sparked the vision for what Tim and wife Bec, in partnership with Rob, have now brought to life as Waubs Harbour Distillery.

The salt-battered distillery, once an old oyster hatchery and neighbouring former abalone farm, sits on the edge of the ocean in the old fishing town of Bicheno on the east coast of Tasmania. Tim, Bec & Rob meticulously restored the building into a world class production facility, including a cooling system that uses energy from the cold ocean water, to make one thing: maritime Tasmanian single malt whisky.

If you're reading this book the tour & tasting! I was little put off at first because there was no phone number to ring and ask questions or book over the phone. So I turned just turned up to check them out first. I ended up booking online with my phone when I got there and was not disappointed. My tour guide Tom was great, very knowledgeable and informative, I learnt a lot. It was a great experience and well worth it. Bicheno is such a nice town and the distillery is situated in an amazing location. The views are spectacular. Highly recommended.

An absolutely stunningly beautiful location for a spectacular distillery. Waubs is just over a two hour drive from Hobart and well worth the drive. Coming from the USA I have made three trips to Waubs: in June 2023, July 2024, January 2025 and I’m already planning my next visit.

Their whiskies are always fantastic. I recommend grabbing more than you think you will want to buy (especially if you live in the USA where their whisky is not available). Nothing worse than running out of Waubs!

Congrats to Rob, Tim and Bex for the fine job in building a superb distillery and business.

Did the tour and tasting.. was $70 per person.. excellent value..
Thomas was excellent as our tour guide... fully knowledgable about the company and whiskey..

Tasting was of four different whiskeys which covered their full range..

If you are into whiskeys then I cannot recommend this unique distillery enough..

Going back to Victoria will be introducing the lads to the purchases I made... this has made it onto my favourites list..

The only thing missing would be some merch... t shirt or the like.. 😀
