Sullivans Cove Distillery is the sum of many things - an unrushed approach to distilling, its geographic location, Tasmania, Australia, and above all a dedication to realise the full potential of every cask.
Using 100% local ingredients their unrushed process does not follow timelines. The whisky comes good when the whisky comes good. The Sullivans Cove mentality does not compromise; whatever it takes to craft exceptional single cask whisky. Only a couple of hundred bottles of the world-class, award-winning whisky are released at a time, each batch having its own unique character and flavour profiles. No two batches are the same. To taste a whisky that can never be replicated visit our new cellar door experience from 10 - 4.30pm every day of the week.
In 2019, Sullivans Cove French Oak Single Cask was awarded “World’s Best Single Cask Single Malt” at the World Whiskies Awards. This followed winning the same award for our American Oak Single Cask in 2018, making Sullivans Cove the only distillery in the world to ever win the award twice. In 2014, Sullivans Cove French Oak was also named “World’s Best Single Malt” at the World Whiskies Awards, and is still the only Australian whisky ever to win World’s Best. The latest recognition was a category gold in 2025 for the Single Cask Single Malt – 13 – 20 Years.
