Sullivans Cove, the internationally acclaimed Australian whisky producer, marked a momentous milestone in its storied history last week - the brand unveiled its newly refurbished $14 million distillery in Hobart, Tasmania, while simultaneously celebrating its 30th anniversary.

This landmark event, attended by key stakeholders, media representatives, and friends of the brand, not only showcased the renovated facility but also heralded a new era for the award-winning whisky maker. The grand reveal of the enhanced distillery underscores Sullivans Cove's commitment to innovation and quality, setting the stage for the next chapter in its illustrious journey.

To commemorate this significant milestone, Sullivans Cove welcomed guests into the distillery for the grand reveal event, where they enjoyed exquisite canapés paired with the oldest and rarest whiskies from the distillery’s archive. The celebration was further enhanced by a captivating performance from the musicians of the Tasmanian Symphony Orchestra, creating an unforgettable experience that highlighted the rich heritage and craftsmanship of Sullivans Cove.

The impressive $14 million refurbishment enables Sullivans Cove to further leverage its meticulous attention to craftsmanship and quality, the foundation of its global reputation. Designed by Yaron Kanor from Studio Y, the renovated distillery and visitor experience can now welcome 100 seated guests, offering tastings and guided tours showcasing the inner workings of this iconic whisky brand and making it a must-visit destination for tourists and whisky enthusiasts alike.

Central to the expansion is the introduction of new grain handling, fermenting, and distilling equipment, meticulously designed to allow further control over the brewing and distilling process. Perhaps most notably, Sullivans Cove has added two new stills - a wash still and a spirit still named Eva and Goldie - which now accompany Myrtle, the original copper pot still that has been instrumental in crafting their spirit for the last three decades.

In recent years, Sullivans Cove has amassed a global following, with their product available only via online ballot, waitlist, or on-pour at a select number of venues, operating almost exclusively direct to consumer. The distillery expansion, partly thanks to financial support from the Commonwealth Department of Industry, Science, Energy and Resource, will enable Sullivans Cove to better meet demand into the future while maintaining the exceptional quality that defines their whisky.
