What started as a cooperative of family-owned dairy farmers has evolved into the heart of Hellyers Road, Australia's oldest continually operating single malt whisky distillery. Inspired by the pristine Tasmanian wilderness, our founders embarked on a journey in 1997 to distil a whisky that encapsulates the purity of the region—leveraging clean air, abundant water, and fertile soil.

This journey bore fruit in 1999 with our first spirit, laying the groundwork for a distillery that melds tradition with innovation while paying homage to the land that gives our whisky its distinctive character.

Lovely place with fantastic food! The best roasted potatoes in all of Tasmania. Believe me, you have to try it! And the coconut lime cheesecake was heavenly. The staff were so kind and made our visit a wonderful time. Thank you so much for your hospitality!

Not whiskey drinkers But after tasting their 21 year old whiskey we are now in love with their extremely excellent whiskey. We even bottled our own and dipped the bottle into the red wax. . It was once in a lifetime experience.

Had a combined Valentine's Day lunch with friends visiting from Victoria. Gorgeous views, pleasant atmosphere and great food! They had a set menu for Valentine's Day, three courses including oyster entree! And of course the whiskies are good, and whisky cream liqueurs are to die for. The coffee "Irish cream" is my go-to favourite now!! 😋
