Clyde Mill Distillery + Kitchen

True Tasmanian Highland Gin & Whisky - we decide when to begin, but the Highlands decide when it’s finished.

Clyde Mill Distillery sits in the heart of Tasmania’s Central Highlands, where a historic 1820s water‑powered flour mill has been thoughtfully revitalised into a modern distillery, restaurant, and visitor destination. The site forms part of the historic Nant Estate at Bothwell, a region long known for its agricultural heritage and cool‑climate purity, ideal conditions for crafting exceptional Tasmanian spirits.

The Ramsay family, generational farmers with deep ties to the area, have led the transformation of the old mill into a place that celebrates heritage, craftsmanship, and community. Their vision brings together premium single malt whisky, bespoke gin, and a paddock‑connected culinary offering through the Mill Kitchen, which highlights locally sourced ingredients and strong community relationships.

Clyde Mill’s current whisky offerings represent a unique and finite chapter in the distillery’s story, distilled onsite between 2019 and 2021. Each release has been presented in a true single‑cask format, drawn from individual barrels; and a triple cask blend created only with their neighbouring casks to preserve the integrity of the spirit’s original character. This collection stands as a rare snapshot of the mill’s formative years, a limited, unrepeatable series shaped by the cool Highland climate and the historic mill environment.

Looking ahead, the next major milestone arrives when the first fully matured Clyde Mill Single Malt range will be ready for release. These whiskies, distilled under the current team and matured entirely onsite, will mark the beginning of the distillery’s long‑term house style and the debut of its flagship expressions.

Alongside whisky, Clyde Mill’s gin range showcases the richness of local Tasmanian produce. The Highland Dry Gin is built on classic juniper structure with a distinctly regional freshness; the citrus‑forward gin highlights bright, aromatic fruit; and the Westerway raspberry gin draws on native botanicals and locally grown berries to create a vibrant, flavour‑driven spirit. Each gin reflects the landscape and agricultural heritage surrounding the mill, offering a contemporary expression of the Highlands.

At its core, Clyde Mill is a story of Tasmanian spirit revitalised: a historic mill brought back to life, a family’s commitment to place, and a distillery that honours the past while shaping a new chapter for the Highlands.
